3 simple egg recipes to-go for busy mamas

If you have followed for sometime now, then you know I practically eat egg whites 360 mornings a year for breakfast. Most people find egg whites gross but I looove them. However, lately I have found myself a little bored as hubs like a little more pep in his eggs and I went on the hunt for some new egg recipes that are super simple to make and can be taken on the go for those of us that are crazy busy.

I also wanted to make sure they were relatively simple to make (as we are all super busy) and healthy too (because who doesn't want to start the day off on the right foot?!). I have been asked to classify how I eat and well, if categorized, I would say it is most similar to paleo. But I do believe in having some healthy carbs as well. My brain needs it.

So, as a two-job, working mama, I totally dig quick foods that are also easy to take on the go and taste amazing...

ingredients:
  • eggs
  • ham or turkey (smoked too)
  • scallions, cheese, mushroom all if desired

directions:
  1. preheat oven to 400 degrees
  2. grease muffin pan I use this coconut oil or spray
  3. place 1 or 2 slices of ham or turkey into each cup
  4. in small side bowl, crack eggs (I used whites) add in mushrooms, scallions, peppers (whatever your heart desires. beat and pour into meat
  5. place pan in oven and bake up to 15 mins depending on how you like your eggs cooked
  6. enjoy!

ingredients:
  • 2 large eggs
  • 4 tablespoons feta or other cheese
  • 1/4 teaspoon of each salt & pepper
  • 1 cup baby spinach
  • 1 medium sweet red bell pepper cut in half and seeded

directions:
  1. preheat oven to 350 degrees
  2. break 2 eggs and add to a blender along w/ 1/4 tsp of salt & pepper. pulse until combined and fluffy
  3. add 1 Cup baby spinach, 2T (tablespoons) feta (we use regular cheese) & stir to combine, pour into pepper halves (already sliced and seeded) sprinkle more cheese on top and a little more black pepper if desired
  4. place filled peppers next to each other in casserole dish so they prop each other up and won't tip over, and bake until eggs puff and are set 15-20 mins

ingredients:
  • 14 eggs
  • 16oz ground turkey
  • onion
  • asparagus
  • spinach
  • pepper
directions:
  1. preheat oven to 350 degrees
  2. crack and mix eggs in large bowl
  3. cook ground turkey
  4. slice all veggies
  5. mix all ingredients together in large bowl
  6. spray casserole dish with non-stick coconut spray
  7. pour in ingredients
  8. bake for 40 mins
  9. top with avocado and hot sauce

  1. Thanks for the recipes Barbie, I loooove eggs!! I don't have time during the week, but boy do I make up for them on the weekend. Sometime I just make scrambled eggs in a tortilla with salsa for a snack! And I never thought coconut oil for cooking, I only use in my hair...LOL!! Love you, Jeanie xoxo
