Oatmeal, Egg-white Pancake

One of the top five questions I get asked on a regular basis is what do I eat? Today, I have decided to share a simple recipe (some of you may already know it) that my friend Gina gave me yearrrrrs ago while we were competing. And the best part is = it's super simple, fast, tasty and healthy!!

Ingredients: 6 egg whites, 1/2 Cup oatmeal, dash of cinnamon, 1 teaspoon vanilla, truvia or sweetener to taste (I use 1 packet), almond butter for topping

^^crack eggs, whites only and mix all ingredients in bowl

^^gently whisk/mix

^^pour into pan (I use non-stick coconut spray first) cooking over medium 
I let the bottom firm up, then flip

^^top with almond butter, syrup or eat plain

I love egg whites and oatmeal so much that I eat them about 360 mornings a year! This pancake version is super easy to make, especially for meal prepping, on the go and kids love it too. My hubs loves to take one on the way to work and eats it cold in the mornings. I personally like mine warm with syrup or almond butter on top. I have found it is an awesome way to get some protein in the kid too. I let Danica help me make it and add some sprinkles to hers as well (I usually do 1/2 the recipe for her).
